Spanish Beans

1 lb. Beans (pinto, black, chickpeas etc.) 

Wash and clean beans, make sure there are no stones or dirt. Soak beans over night. Once soaked, rinse and add beans to a pot with water. Bring water to a boil, and then lower the heat to a simmer until beans are tender. 

1/2 onion, chopped

1/4 red pepper, chopped

2 celery stalks, chopped

Salt to taste

1/2 tsp. cumin

1 T. tomato paste

4 garlic cloves, mashed

1/2 tsp. oregano

1 tsp. salt

Cilantro (optional) 

Chop the vegetables finely. Mash and garlic, oregano, salt, and cilantro into a smooth paste. Sautee all ingredients with no oil. Once the beans are tender, add the sautéed ingredients to the beans and cook for 20 min.
